Quick Roasted BeetsPrint

Beets can be found on the farmers market until November. When beets are boiled they can take up to an hour to cook. Roasting them in the oven takes only 20 minutes and you will have a delicious, fast side dish

INGREDIENTS

  • 3 medium beets or 4-6 small beets
  • 1 tbsp olive oil
  • Ground black pepper to taste

DIRECTIONS

  1. Preheat the oven to 450F
  2. Slice raw, unpeeled beets into thin slices
  3. Toss sliced beets with olive oil and black pepper
  4. Spread beets on a cookie sheet
  5. Cook for 16-18 minutes
