Steps Amount Ingredients
1 2 Ib 1 kg Red and golden beets
2 2 tsp 10 ml Olive oil
¼ tsp 1 ml Salt
¼ tsp 1 ml Black pepper
1 tsp 5 ml Lime juice
1/8 tsp ½ ml Balsamic vinegar
3 1 cup   250 ml     Fresh arugula
¼ cup 60 ml Fresh cilantro, finely chopped (optional)

Step 1

Preheat oven to 3750

  • Wash the beets, leave the skin on
  • Place beets on a large baking sheet
  • Bake for 1 to 1½ hours until soft. You should be able to puncture the beet with a toothpick.
  • Set aside and when cooled, peel the beets

Step 2:

  • While the beets are baking prepare the dressing
  • In a small bowl whisk together the olive oil, salt, pepper, lemon juice and balsamic vinegar. Keep the dressing in the fridge until ready to use

Step 3:

  • Slice the beets with a mandolin or sharp knife into thin rounds and arrange them decoratively on a serving plate
  • Combine the arugula and cilantro if using
  • Place the arugula and cilantro on top of the beets then drizzle with the balsamic dressing and serve
